Easy Microwaved Dish - Eggplant in an Asian Marinade

Ingredients

  • 1 Eggplant (slim Japanese type)
  • 3 Green onion
  • 1 Sesame seeds
  • 2 tbsp Fish sauce
  • 2 tbsp Lemon juice
  • 1 piece Ginger (grated)
  • 1 tbsp Sugar
  • 1 tbsp Water

Instructions

  1. Combine the ingredients in a dish.
  2. Cut the eggplant lengthwise into 2 or three pieces and cut into easy-to-eat pieces.
  3. Cut the green onions in the same way.
  4. Wrap with plastic wrap and heat in the microwave until wilted (3-4 minutes).
  5. Marinate in Step 1's marinade and mix until evenly coated.
  6. Once cooled, chill in the refrigerator and serve.
  7. I used this fat eggplant.
  8. If you use a thin eggplant, I suggest using a few.
