Ingredients

  • 2/3 c. sugar
  • 2 tbsp. cornstarch
  • 2 tbsp. lemon juice
  • 2 egg yolks
  • 3/4 c. water
  • 1 teaspoon grated lemon rind
  • 1 tbsp. butter

Instructions

  1. In saucepan, combine sugar, cornstarch, lemon juice and egg yolks.
  2. Stir in water, place over heat and bring to boil.
  3. Stir constantly.
  4. Cook 1 minute; remove from heat and add in lemon rind and butter.
  5. Cold before using.
  6. Fills 2 layer cake.
  7. Is also great over gingerbread.
