Easy, Hot, and Homemade Dandan Noodles

Ingredients

  • 1 serving Chinese noodles (fresh)
  • 300 ml Water
  • 1/2 tsp Doubanjiang
  • 30 grams Sesame seed paste (or tahini)
  • 1 tsp Chinese soup stock
  • 1/4 tsp Vinegar
  • 1 tsp Soy sauce
  • 1 as much (to taste) Ra-yu
  • 1 Vegetable oil
  • 80 grams Ground pork
  • 1 dash Grated garlic
  • 1 dash Grated garlic
  • 2 tsp Miso
  • 1 tsp Sugar
  • 1 tsp Doubanjiang
  • 1 tbsp Sake
  • 1 Chopped Japanese leek

Instructions

  1. Add all the soup ingredients in a pot and simmer over low-medium heat until the sesame seed paste begins to soften and melt.
  2. Prepare the toppings in the meantime.
  3. Heat vegetable oil in a frying pan, and saute the pork, garlic and ginger.
  4. Once the toppings from Step 2 have been cooked, add in the miso, sugar, sake, doubanjiang and stir-fry some more.
  5. Boil water in a large pot and cook the noodles to your desired firmness.
  6. Warm up the bowl in the meantime, and pour in the soup.
  7. Once the noodles have cooked through, place them in the bowl with the soup.
  8. Garnish with the toppings from Step 3 and julienned leek.
