Ingredients
- 4 tbsp Ground sesame seeds
- 2 tbsp Miso
- 1 tsp Doubanjiang
- 2 tbsp Sesame oil
- 2 tsp Sugar
- 1 tsp Soy sauce
- 1/2 to 1 piece/clove each Garlic and ginger
- 60 grams Ground pork
- 600 ml Water
- 2 tbsp Chicken soup stock (granules)
- 1 Cellophane noodles
- 1 Green onions
- shiitake mushrooms
- carrots
- bean sprouts
- Chinese chives etc. - vegetables of your choice
- 1 as much (to taste) Ra-yu
Instructions
- Finely chop or grate the garlic and ginger, whichever you prefer.
- Combine all the ingredient in a pan, and mix well with a spatula.
- Cook over low-medium heat until bubbling and fragrant.
- Add the ground pork and stir fry it.
- When the color of the meat changes, add water, chicken soup stock, the vegetables and cellophane noodles.
- Cook until the noodles are tender.
- Add as much ra-yu as you like and enjoy.
- If you add too many vegetables it will become too weirdly sweet.
- It will still taste nice, but won't really be like dan dan noodles.
- This version has rice and a generous amount of vegetables in it.
- The version in the main photo only has green onion, shiitake mushrooms and cellophane noodles.
- You can use a can of mackerel instead of ground pork.
- Try adding leftover rice to make it like a rice soup, or use ramen noodles instead of cellophane noodles!
