Ingredients
- 1 c. onion
- diced
- 1 med. bell pepper
- minced
- 3 tbsp. oil
- 2 tbsp. flour
- 1 (6 ounce.) tomato paste
- 2 1/4 c. chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 1/4 teaspoon warm pepper sauce
- 2 c. cooked chicken
- cubed
- 1 clove garlic
- Pepper to taste
Instructions
- Saute/fry onion, bell pepper and garlic in the oil.
- Add in the flour and stir till brown.
- Stir in the tomato paste, broth, salt, sugar and sauce.
- Cook till the mix becomes thickened.
- Put heat on low and simmer for 5 min, uncovered.
- Add in the chicken and pepper, simmer for 5-10 min more.
- Serve over rice.
