Ingredients
- 1 onion
- chopped
- 1 summer squash
- sliced
- 1 tomatoes
- peeled and diced
- 1 zucchini
- sliced
- 1 red sweet bell pepper
- seeded and minced
- 1 teaspoon fresh minced oregano
- 1 (8 ounce) can tomato sauce
- 2 ounces shredded mozzarella cheese
Instructions
- Combine vegetables in a baking dish.
- Sprinkle with oregano; pour on tomato sauce.
- Bake uncovered in preheated 350 degree oven for 20 minutes.
- Top with Mozzarella cheese and bake an additional 4 to 5 minutes, until cheese melts.
