Easy 1-Hour Chili

Ingredients

  • 1 lb Ground beef
  • extra lean
  • 2 tbsp Olive oil
  • 1 small Onion
  • chopped
  • 5 clove Garlic
  • smashed and minced
  • 1 can Diced tomatoes
  • 1 can Tomato sauce
  • 1 can Red Kidney beans
  • 1 can Pinto beans
  • 2 cup Beef broth
  • 3 tbsp Chili seasoning (see my recipe for Natural Chili Seasoning)
  • 1 1/2 Cheddar cheese
  • shredded (optional)

Instructions

  1. In a large pot heat the olive oil on medium-high.
  2. Saute the garlic till it just becomes gold on the edges.
  3. Add the garlic and cook with the onion for 3-5 minutes.
  4. Transfer the onion and garlic to a bowl.
  5. Brown the ground beef in the same pot.
  6. Once there is no more pink in the meat, return the onions and garlic back to the pot.
  7. Reduce heat to medium low.
  8. Add all the other ingredients except the seasonings, stir, cover and simmer for 20 minutes.
  9. Add the seasonings and mix well.
  10. Cover and continue to simmer for 15 minutes.
  11. Serve in bowls and garnish with the shredded cheddar.
