Eastern Shore Gazpacho Recipe
Ingredients
- 1 (14 ounce.) can tomatoes
- undrained
- 1 med. green pepper
- minced
- 1/2 cucumber
- peeled & sliced
- 1/2 c. onion
- minced
- 2 tbsp. oil
- 2 tbsp. wine vinegar
- 1 teaspoon salt
- 1 teaspoon sugar
- Tabasco sauce (opt.)
- 1/2 c. croutons
Instructions
- Mix all ingredients except croutons in a bowl and refrigerate6 hrs.
- Just before serving, garnish with croutons.
- Serves 4 to 6.
