Easter Chowder

Ingredients

  • 3 cup Leftover mashed potatoes
  • 3 cup Ham stock (boiled down from bone and drippings)
  • 1 can Creamed corn
  • 1 cup Milk or cream
  • 3 cup Frozen or canned corn (drained)
  • 1 lb Or so
  • chopped leftover ham
  • 1/2 each Onion
  • diced
  • 1 as needed Seasonings to taste. Start with no salt as ham is salty.

Instructions

  1. Saute the onion in a little butter or oil until tender.
  2. Combine all remaining ingredients in a pot.
  3. Stir well to combine and heat over medium to medium low heat.
  4. Stirring occasionally.
  5. Once chowder is heated through, taste and add seasoning to your liking.
  6. I added some garlic powder, onion powder, parsley & white pepper to mine.
  7. This could easily be put in a slow cooker and left on low all day as well.
