Ingredients
- 1 whole chicken
- 3 garlic cloves
- 1 lemon
- zest of
- 2 rosemary sprigs
- salt
- to taste
- pepper
- to taste
Instructions
- Preheat oven to 425 degrees.
- Place chicken on a rack in a roasting pan or cast-iron skillet.
- In a blender or food processor, combine garlic, lemon zest, and rosemary.
- Spread puree under the skin of the chicken.
- Sprinkle generously with salt and pepper.
- Cook the chicken for 15 minutes for each pound, plus 15 minutes (i.e., a 3-lb bird: 15 minutes x 3 + 15 minutes = 60 minutes).
- Chicken is done when juices run clear when pricked with a fork.
