Ingredients
- 2 c. dry beans
- Blackeyed Peas
- Pinto
- Navy
- etc.
- 1 onion
- minced
- 1 clove garlic
- pressed
- 1/2 pound salt pork
- sliced thick or possibly smoked ham hocks
- 1/4 teaspoon dry red pepper
- 1 stalk celery
- minced
- Water
- 1 teaspoon salt
Instructions
- Pick and wash beans under running water.
- Put beans in 2 qt pot, cover with water, add in salt and boil about 15 min.
- Let stand till cold, drain, rinse and set aside.
- Put the remaining ingredients in a 4 qt pot, cover with water, bring to a boil and let simmer for 1 hour.
- Add in the beans and cook another 2 hrs.
- Excellent with Cole Slaw and Corn Bread.
