Ingredients
- 1 rotisserie-cooked chicken
- 44oz .
- I use a rottissered chicken
- buttery garlic
- 1 tablespoon vegetable oil
- 1 onion
- chopped
- 3 garlic cloves
- crushed
- 2 (4 ounce) cans rotel
- with green chilies
- 1 12 teaspoons ground cumin
- 1 teaspoon ground black pepper
- 2 (14 1/2 ounce) cans chicken broth
- 4 (15 ounce) cans white beans
- 1 cup shredded cheddar cheese
Instructions
- Heat the oil in a large pot over medium heat.
- Cook the onion until tender.
- Mix in the garlic, rotell, cumin, and pepper.
- Stir the mixture until tender, about 3 minutes.
- Mix in the chicken broth, chicken and white beans.
- Simmer about 30 minutes.
- Stir occasionally.
- Remove from heat.
- Slowly stir in the cheese until melted.
- Serve.
