Ingredients

  • 1 pound grnd round
  • 1/4 minced onion
  • 1 (8 ounce.) tomato puree
  • 1/2 teaspoon basil
  • 1 teaspoon parsley
  • 1 teaspoon oregano
  • 1 teaspoon garlic salt
  • Dash pepper
  • 1 (4 ounce.) can mushrooms
  • liquid removed
  • 1 (4 ounce.) pkg. Mozzarella cheese
  • cut in strip
  • 1 (10 ounce.) pkg. frzn minced spinach
  • 1 (6 ounce.) container cottage cheese

Instructions

  1. Saute/fry beef and onions; drain off fat.
  2. Add in puree, basil, parsley, oregano, salt, pepper and mushrooms.
  3. Thaw spinach and squeeze out water.
  4. Combine spinach and cottage cheese.
  5. (May use blender.)
  6. In 9 inch square or possibly 7 x 11 inch dish, arrange in layers: spinach mix, meat mix and cheese.
  7. Repeat, ending with cheese.
  8. Bake at 375 degrees for 15 to 20 min or possibly till warm and bubbly.
  9. Serves 6.
  10. Each serving: 3 meat (protein) exchange, 1 vegetable exchange, 2 fat exchanges.
