Ingredients
- 1 pound grnd round
- 1/4 minced onion
- 1 (8 ounce.) tomato puree
- 1/2 teaspoon basil
- 1 teaspoon parsley
- 1 teaspoon oregano
- 1 teaspoon garlic salt
- Dash pepper
- 1 (4 ounce.) can mushrooms
- liquid removed
- 1 (4 ounce.) pkg. Mozzarella cheese
- cut in strip
- 1 (10 ounce.) pkg. frzn minced spinach
- 1 (6 ounce.) container cottage cheese
Instructions
- Saute/fry beef and onions; drain off fat.
- Add in puree, basil, parsley, oregano, salt, pepper and mushrooms.
- Thaw spinach and squeeze out water.
- Combine spinach and cottage cheese.
- (May use blender.)
- In 9 inch square or possibly 7 x 11 inch dish, arrange in layers: spinach mix, meat mix and cheese.
- Repeat, ending with cheese.
- Bake at 375 degrees for 15 to 20 min or possibly till warm and bubbly.
- Serves 6.
- Each serving: 3 meat (protein) exchange, 1 vegetable exchange, 2 fat exchanges.
