Ingredients
- 1 teaspoon vegetable oil
- 2 cups apples
- diced (and peeled if you prefer)
- 12 cup celery
- chopped
- 12 cup onion
- chopped
- 1 garlic clove
- minced
- 1 teaspoon curry powder
- 12 teaspoon ground cinnamon
- 14 teaspoon ground ginger
- 1 pinch white pepper
- 2 teaspoons cornstarch
- 2 cups canned chicken broth
- undiluted
- 2 cups boneless skinless chicken
- cooked
- 14 cup raisins
- 3 cups cooked long-grain rice (
- cooked without salt or fat)
Instructions
- Heat oil in large skillet over medium heat.
- Add apple and next 7 ingredients.
- Cook 5 minutes, stirring occasionally.
- Combine cornstarch and chicken broth, and add to apple mixture.
- Stir in chicken and raisins, and bring to a boil.
- Cook over medium heat, stirring constantly, until thickened.
- Serve or rice.
