Ingredients
- 1 large Japanese sweet potato
- 100 grams Bacon
- 1/4 Onion
- 1 tbsp Maille Dijon Mustard (whole grain)
- 4 tbsp Mayonnaise
- 1 Salt and pepper
Instructions
- Chop the sweet potato into 2cm pieces and steam in a steamer for 20 minutes.
- (Or, microwave for 7 minutes.)
- Salt and pepper the bacon and onions and microwave for 3 minutes.
- Peel the potatoes while they're hot and crush into bite-sizes.
- Combine with the onion and bacon from step 2 and ingredients, and mix everything together.
- Here is a variation with broccoli - lots of calcium.
