Ingredients
- 1 lb 97% fat free ground turkey
- 2 chicken breasts
- cubed
- 12 red pepper
- chopped small
- 12 yellow pepper
- chopped small
- 2 teaspoons minced garlic or 2 garlic cloves
- finely chopped
- 1 small onion
- finely chopped
- 1 zucchini
- sliced thick then chopped small (1/2 green and 1/2 yellow for added color)
- 1 teaspoon olive oil
- 1 (8 ounce) can low-fat cream of mushroom soup
- 1 cup parmesan cheese
- 1 tablespoon butter or 1 tablespoon margarine
- 1 teaspoon crushed red pepper flakes (optional)
- 14 cup low-fat cream cheese or 14 cup fat free cream cheese
- 14 cup low-fat milk or 14 cup nonfat milk
- 14 cup water
- 1 lb whole grain noodles (your choice)
Instructions
- In a large sauce pan, add oil, cubed chicken, turkey, chopped peppers, garlic, zucchini and onion.
- Cook till meat is fully cooked and vegetables are tender.
- In a separate pot cook noodles according to directions.
- When meat mixture is fully cooked, add mushroom soup, water, cream cheese, butter, milk parmesan cheese and crushed red pepper.
- Stir well until cream cheese is melted.
- You want the sauce to be similar consistency to spaghetti sauce.
- Add more milk if needed.
- Drain noodles and add to sauce mixture.
- Stir well coating noodles thoroughly and serve.
- Add additional parmesan cheese if desired.
