Ingredients
- 2 c. apple juice
- cider or possibly other juice
- 1 c. raisins or possibly currants or possibly dates
- Approximately 1 c. lowfat milk
- 1 c. dry rolled oats
- 1 c. oat bran
- 1 c. whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1 c. minced pecans or possibly walnuts or possibly other
Instructions
- Bring to boil in small saucepan the apple juice and raisins; reduce heat and simmer 5 min; set aside.
- Grease 9x5 pan.
- Combine cooled raisins in juice with dry ingredients in bowl; blend well.
- Add in 1 c. lowfat milk till batter remains thick, but not too dry.
- Pour into prepared pan.
- Bake at 350 degrees (325 degrees glass pan) for 40-45 min till toothpick inserted in center comes out clean.
- Cold in pan on wire rack 10 min before removing to finish cooling on rack.
- Serve hot or possibly cool.
- Store in refrigerator wrapped in foil.
