Ingredients
- 2 1/2 lbs. red potatoes
- 8 ounce. plain yogurt
- 3/4 c. mayonnaise
- 2 tbsp. sugar
- 2 tbsp. cider vinegar
- 2 teaspoon curry pwdr
- 3/4 teaspoon salt
- 1 sm. clove garlic
- chopped
- 1 c. celery
- sliced thin
- 1/2 c. minced onion
- 1/2 c. raisins
- 1/4 c. minced parsley
- 2 c. bite-size broccoli flowerettes
- 1/4 teaspoon pepper
Instructions
- Cook potatoes; drain.
- Cold and cut in 3/4 inch cubes.
- In a large bowl, stir together yogurt, mayonnaise, sugar, salt, pepper, vinegar, curry, and garlic.
- Stir in celery, onion, raisins, and parsley.
- Add in potatoes and broccoli.
- Mix gently till well coated.
- Cover and chill at least 3 hrs.
- Serves 10.
