Ingredients
- 6 slices bacon
- 2 cups finely cut organic lacinitos kale
- 34 cup coconut milk
- 2 teaspoons Thai curry paste
- 1 lb simply potatoes jalapeno & cream cheese mashed potatoes
Instructions
- In a heavy nonstick frying pan heat bacon until browned.
- Remove with slotted spoon and crumble, set aside.
- In drippings, add kale and cook until wilted.
- Open a can of coconut milk without shaking and scoop off the top, most creamiest part until you have 3/4 cup.
- Add coconut to the pan with curry paste.
- Add potatoes and cook, covered, until softened.
- Stir in crumbled bacon and adjust seasoning to taste.
- Adjust Thai curried paste to your liking, some brands are spicier/ saltier than others.
- Adjust for salt.
