Ingredients

  • 2 teaspoons vegetable oil
  • 1 red bell pepper
  • chopped
  • 1 12 cups chopped onions
  • 1 cup quinoa
  • rinsed
  • 2 teaspoons ground cumin
  • 12 teaspoon dried chipotle powder
  • 2 cups vegetable broth
  • 1 (16 ounce) can black beans
  • drained and rinsed

Instructions

  1. In a medium saucepan, heat oil.
  2. Add pepper and onions; cook stirring for 5-6 minutes or until slightly softened.
  3. Stir in remaining ingredients except beans.
  4. Reduce heat to medium low and simmer 12-15 minutes or until quinoa is barely tender.
  5. Stir in beans.
  6. Fluff with a fork.
