Ingredients
- 2 English cucumbers
- whole and1/8 inch slice
- 1 daikon radish
- whole and 1/8 inch slice half-moon slice
- 2 jalapeno peppers
- 1/8 inch slice
- 2 stalks green onions
- sliced
- salt
- cold water
- 1 cup white vinegar
- 1 14 cups sugar
- 1 tablespoon salt
- 4 tablespoons sweet chili sauce
- Mae Ploy brand
Instructions
- In a large mixing bowl add salt and cold water and combine and add in the cucumbers, daikon, pepper and green onion and mix well.
- Let mixture set for 1 hour and drain into a colander and run under cold water to wash.
- In a large stainless steel mix bowl add and combine vinegar, sugar, salt and sweet garlic sauce mix well.
- Add in the cucumber and daikon mixture and combine well.
- Place into a plastic container and into the refrigerator for a week before use.
