Ingredients
- 2 whole Chicken Breasts
- 4 cups Corn Flakes
- Crushed
- 1 cup Flaked Coconut
- 1 teaspoon Ground Ginger
- 1 teaspoon Salt
- 1/2 teaspoons Ground Pepper
- 2 whole Eggs
- 2 Tablespoons Milk
- 1 cup Honey Mustard Dipping Sauce
- Optional For Serving
Instructions
- Preheat oven to 375 degrees F. Spray a baking sheet with cooking spray.
- Pound the chicken breasts until 1/2 thick and cut into 2 inch strips.
- In a shallow bowl mix corn flakes, coconut, ginger, salt, and pepper.
- In another shallow bowl beat egg and milk.
- Dip the chicken into the egg mixture then into the corn flake mixture.
- Press to ensure the corn flakes stick to the chicken.
- Place on the prepared baking sheet and bake for 12-14 minutes.
- Serve with a honey mustard dipping sauce.
