Crostini with Prosciutto, Goat Cheese and Fig Jam

Ingredients

  • 6 slices From A Baguette
  • 18 cups Olive Oil
  • 1 teaspoon Coarse Salt
  • 4 ounces
  • weight Goat Cheese
  • Plain
  • Room Temperature
  • 6 Tablespoons Fig Jam
  • 3 slices Prosciutto
  • Cut In Half
  • 6 slices Fresh Basil Leaves

Instructions

  1. Preheat oven to 375 F degrees.
  2. Slice six 1/2-inch slices of bread from the baguette.
  3. I slice mine slightly on the diagonal.
  4. Place on a baking sheet and brush generously with the olive oil.
  5. Sprinkle a little salt on each slice.
  6. Bake for about 10 minutes, or until crisp and slightly golden.
  7. Watch that they do not burn.
  8. Remove from the oven and cool slightly.
  9. Spread some goat cheese on each crostini.
  10. Spread about a tablespoon of fig jam on top of the goat cheese.
  11. Fold the half slices of prosciutto and place on top of each crostini.
  12. Lay a fresh basil leaf on each and serve.
