Ingredients
- 3 pounds sweet potatoes
- or yams peeled and cut into 1-inch cubes
- 1/4 cup apple cider
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon sea salt
- 1/2 teaspoons black pepper freshly ground
- 2 tablespoons butter
- 2 tablespoons cream cheese
- 8 slices bacon
Instructions
- Add the sweet potatoes, apple cider, brown sugar, cinnamon, salt and pepper into a Crockpot.
- Cover, and cook on low for 3 hours.
- Uncover, and add the butter and cream cheese.
- Mash until smooth.
- Transfer to a serving dish.
- In a skillet, cook the bacon until crisp.
- Drain on paper toweling and discard the fat.
- Crumble the bacon over the mashed sweet potatoes.
- Serve immediately.
