Crispy Potato Wedges Recipe

Ingredients

  • 1/4 c. extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon each dry basil
  • thyme and oregano leaves
  • 1/4 teaspoon paprika
  • 4 to 6 med. potatoes
  • 1/4 to 1/2 c. grated Parmesan cheese

Instructions

  2. Combine extra virgin olive oil and seasonings in a bowl.

  4. Scrub unpeeled potatoes well.
  5. Cut each potato in half lengthwise, then in thirds.

  7. Coat each slice in the seasoned oil.
  8. Spread in a single layer on a greased baking sheet.

  10. Bake at 450 degrees for 15 min.
  11. Sprinkle with the cheese.
  12. Bake 15 min longer.
  13. Good served with: Pork chops, grilled chicken, roasts or possibly meatloaf.
  14. Tips: If the potato skins are too old, pare them and proceed as directed.
  15. But whenever possible, eat potato skins for valuable nutrients.
  16. For 2 servings: Half of the ingredients.
  17. For 8 servings: Double the ingredients.
