Ingredients

  • 3 cups heavy whipping cream
  • 6 each egg yolks
  • 6 tablespoons sugar granulated
  • 1 Teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 2-3 cups strawberries pineapple
  • or peaches

Instructions

  1. In bottom of double boiler, heat cream until scalded.
  2. In double- boiler top, beat yolks with granulated sugar.
  3. Slowly stir cream into yolks.
  4. Cook mixture over hot, not boiling, water until it coats spoon.
  5. Add vanilla.
  6. Refrigerate in 1- to 1 1/2-qt.
  7. ovenware casserole or flat baking dish.
  8. Just before serving:
  9. Over custard, sprinkle brown sugar.
  10. Set custard dish in pan; surround with ice cubes.
  11. Broil custard until sugar caramelizes--about 1 min.
  12. Breaking brown-sugar crust by tapping with spoon, serve in dishes or sherbert glasses.
