Creamy Sesame Tofu

Ingredients

  • 40 grams Kudzu starch
  • 3 tbsp White sesame paste
  • 400 ml Water
  • 1 tbsp Sugar
  • 1 dash Mirin
  • 1 dash Sake

Instructions

  1. Put the kudzu starch and water in a pan.
  2. When the kudzu starch is almost completely dissolved, add all the other ingredients to heat.
  3. Using a wooden spatula, scrape the bottom of the pot while heating the mixture.
  4. When the mixture thickens, stir quickly like you're making a paste.
  5. Continue to knead for a brief time after the mixture becomes bubbly, then turn the heat off.
  6. Pour into a container.
  7. After the tofu mixture cools down slightly, chill it in the fridge.
  8. Enjoy with wasabi soy sauce.
  9. It becomes a dessert if you serve it with kuromitsu.
