Ingredients
- 2 cup of milk
- 10 oz bag of frozen corn kernels (use drained canned corn if you want)
- 1 cup of leftover chopped chicken
- 8 oz block of pepper jack cheese
- 2 can of cream of chicken soup
- 1 can of undrained Rotel
- 1 Red pepper flakes to taste
- 1 Garlic powder to taste
Instructions
- Combine all of the ingredients, except cheese, in a large pot and cook until thoroughly heated.
- After soup ingredients have been heated, break up cheese and add it to the pot.
- Stir frequently until cheese has melted.
- Garnish with cilantro and/or corn chips if desired.
