Creamy Herbed New Potatoes

Ingredients

  • 1 lb tiny new potatoes
  • 2 tablespoons low-fat sour cream
  • 12 teaspoon kosher salt
  • 1 teaspoon fresh coarse ground black pepper
  • 1 tablespoon fresh parsley
  • choppped
  • 1 tablespoon flaked sea salt

Instructions

  1. Scrub potatoes and (if large) cut into quarters.
  2. Cover with water & bring to a boil.
  3. Reduce heat slightly and cook 10-15 minutes or until tender.
  4. Drain well.
  5. Place potatoes in serving bowl and add sour cream.
  6. Stir gently, lightly coating potatoes with sour cream.
  7. Stir in kosher salt, pepper, & parsley.
  8. Garnish with flake salt & serve.
