Ingredients

  • 2 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 6 cups Simply Potatoes Diced Potatoes with Onion
  • thawed
  • 4 ounces goat cheese
  • crumbled

Instructions

  1. Preheat oven to 375 degrees.
  2. Melt butter in medium saucepan over medium heat.
  3. Stir in flour until smooth; cook 1 minute, stirring constantly.
  4. Stir in milk, 1 teaspoon salt and 1/2 teaspoon pepper.
  5. Bring to a boil, stirring frequently.
  6. Reduce heat; simmer 1 minute or until thickened, stirring frequently.
  7. Spray 2-quart baking dish with non-stick cooking spray.
  8. Spoon 1/2 cup sauce into bottom of baking dish.
  9. Place half the potatoes over sauce; top with half the remaining sauce and the goat cheese.
  10. Repeat with remaining sauce and potatoes.
  11. Bake 25 minutes, or until bubbly and golden brown.
