- wiped clean and sliced
- 3/4 cup diced yellow onions
- 1/4 cup diced celery
- 1/2 cup corn kernels
- 2 teaspoons minced garlic
- 1 teaspoon Essence

- drained with their liquor reserved
- 1/4 cup chopped roasted chestnuts
- 2 large eggs
- lightly beaten
- 1 to 2 cups buttermilk
- Hot sauce
- Worcestershire sauce
- 4 cups stale crumbled cornbread
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried leaf oregano
- 1 tablespoon dried thyme
