Ingredients
- 2 cups apples
- peeled and shredded
- 1 13 cups sugar
- 1 cup cranberries
- chopped (fresh or frozen and thawefd)
- 1 cup carrot
- shredded
- 1 cup nuts
- chopped
- 2 eggs
- lightly beaten
- 12 cup vegetable oil
- 2 12 cups flour
- 3 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 2 teaspoons ground coriander (optional)
- 12 teaspoon salt
Instructions
- Preheat oven to 375 degrees F. positioning rack in oven center.
- Line 18 muffin cups with paper liners.
- In a bowl, combine apples and sugar; let stand for 10 minutes.
- Add cranberries, carrots, nuts, eggs and oil; mix well.
- Combine the flour, baking power, baking soda, cinnamon, coriander if used, and salt.
- Whisk to combine, then stir into apple mixture just until moistened.
- Fill paper lined muffin cups two-thirds full.
- Bake in preheated oven for 25-30 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before removing from pans to wire racks.
