Ingredients
- 3 cups water
- 1 12 cups cracked bulgur wheat
- 2 apples
- cut up
- 2 tablespoons lemon juice
- 6 tablespoons parsley
- chopped
- 4 tablespoons mint leaves
- chopped
- 12 cup walnuts
- 1 teaspoon salt
- pepper
- to taste
- 2 cups chicken breasts
- 14 cup scallion
- sliced
- 14 cup lemon juice
- 3 tablespoons olive oil
Instructions
- Boil water.
- Pour over bulgur.
- Let stand for 45 minutes.
- Press out excess water.
- Let cool.
- Pour 2T lemon juice over cut-up apples.
- Tart, crisp apples like Braeburn are best.
- Chop and toast walnuts at 325.
- Let cool.
- Cook chicken breasts, let cool, cut into cubes.
- Poaching works well.
- Mix 1/4 cup lemon juice and 3T olive oil for dressing.
- Combine all ingredients and mix well.
- Chill.
- Tastes best after sitting several hours.
- Store in refrigerator.
