Ingredients
- 2 c. Clamato (tomato-clam cocktail)
- 1/2 c. tomato juice or vegetable juice
- 1/2 red bell pepper
- 1/2 orange bell pepper or yellow bell pepper
- 1/2 poblano pepper or green bell pepper
- 1/2 firm-ripe Hass avocado
- 1/4 c. Chopped cilantro
- 1 clove garlic
- 2 tbsp. fresh lime juice
- 2 tbsp. cider vinegar
- 1 tbsp. Tabasco sauce
- 1 1/2 tsp. kosher salt
- 1 tsp. ground cumin
- 1 tsp. Freshly ground pepper
- 1 lb. jumbo lump crabmeat
- chopped cucumber
Instructions
- In a large pitcher or bowl, combine all ingredients except crab and cucumber.
- Cover and refrigerate until ready to serve.
- To serve, place chunks of crabmeat in small cocktail or juice glasses.
- Top with tomato mixture and garnish with cucumber, if desired.
