Ingredients

  • 2 cups dried couscous
  • 2 12 cups boiling water
  • 12 cup frozen peas
  • 12 cup frozen fine beans
  • 1 tablespoon tomato paste
  • 400 g plum tomatoes
  • roughly cut up
  • 12 teaspoon fennel seed
  • 12 teaspoon dried chili
  • 1 garlic clove
  • crushed
  • 50 g frozen chopped spinach
  • salt and pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 dash balsamic vinegar

Instructions

  1. Put all dry and frozen ingredients in a bowl.
  2. Add wet ingredients and stir gently and leave covered for about 5 minutes.
  3. Ta da!
  4. Lunch is done.
  5. Reheat or eat cold.
  6. If eating straight away make sure your frozen veggies are defrosted.
  7. experiment with different veggies or roasted garlic and if your feeling kinky, sprinkle over a little parmesan, but you will have to count that as part of your sysn/ healthy a option for the day.
