Ingredients
- 3 cups corn kernels
- 12 cup cherry tomatoes
- halved
- 12 cup roasted red pepper
- thinly sliced
- 2 celery ribs
- sliced
- 5 radishes
- thinly sliced
- 12 cup fresh cilantro
- roughly chopped
- 3 tablespoons lime juice
- 1 12 tablespoons olive oil
- 1 teaspoon agave syrup
- 34 teaspoon kosher salt
- 34 teaspoon fresh ground pepper
Instructions
- Combine all vegetables and herbs in a large bowl.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Toss vegetables in lime dressing and let sit for an hour in the fridge or even overnight.
