Ingredients
- 1 package (8oz) cream cheese at room temperature
- 1/4 cup sugar
- 1 large egg slightly beaten
- 2 cups all purpose flour
- 1 3/4 cups sugar
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 cup oil
- 3 eggs lightly beaten
- 2 cups peeled diced apples
- 1 cup shredded carrot
- 1/2 cup chopped pecans
- 3 cups apples peeled and sliced
- 2 tablespoons of margarine
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1 cup heavy whipping cream
- 1 cup brown sugar
- 2 tablespoons margarine
- 2 tablespoons Brandy
- 1 teaspoon vanilla
- 1 cup heavy whipping cream chilled
- 1 tablespoon powder sugar
- 1 teaspoon vanilla
- 8 chocolate shaped apple candies
Instructions
- Preheat oven 350 degrees F. Lightly spray 13x9 inch pan with cooking spray.
- Set aside
- In a medium bowl mix cream cheese, sugar and egg.
- Mix until well blended.
- Combine flour, sugar, baking soda, cinnamon and salt into a large bowl.
- Add oil and eggs.
- Beat until well mixed.
- Fold in apples, carrots and pecans.
- Pour 1/2 apple mixture into prepared pan.
- Next, pour all of cream cheese mixture over apple mixture.
- Carefully spoon rest of the apple mixture over cream cheese, spreading to cover.
- Bake 55 minutes or until done.
- Allow cake to cool.
- Meanwhile, place apples, margarine, sugar and cinnamon in a medium saucepan.
- Cook on medium low heat until tender.
- Stir occasionally.
- Cook about 15 minutes.
- Set aside
- In a large saucepan over medium heat bring whipping cream to a light boil.
- Stirring occasionally.
- Add sugar and cook 5-6 minutes or until mixture is smooth.
- Remove from heat and stir in margarine, Brandy and vanilla.
- Allow to slightly cool
- Chill the small bowl and beaters of an electric mixer.
- Beat the cream in chilled bowl until it begins to thicken and soft peaks form.
- Add the powdered sugar and vanilla and beat until stiff.
- Spoon each desired serving of cake into a Martini glass.
- Next, add a serving of cooked apples over cake.
- Drizzle Sauce over cooked apples and cake.
- Top with whipped cream and chocolate shaped apple candy.
