Cold Yellow Tomato and Orange Soup With Thai Basil
Ingredients
- 1 14 lbs yellow tomatoes (about 4)
- 1 cup orange juice
- 2 tablespoons olive oil
- salt
- 1 pinch cayenne
- 2 tablespoons sour cream
- 8 leaves fresh Thai basil
- finely chopped
Instructions
- In a food processor, puree tomatoes, orange juice, olive oil, salt to taste and cayenne pepper.
- Transfer to a bowl, cover and refrigerate until chilled, about 6 hours.
- Serve garnish with sour cream and basil.
