Ingredients
- 2 lbs manila clams
- 3 tablespoons red onions
- diced
- 3 tablespoons carrots
- diced
- 3 tablespoons celery
- diced
- 14 cup tomatoes
- peeled and chopped
- 1 chipotle chile
- chopped
- 1 teaspoon garlic
- chopped
- 1 tablespoon fresh oregano
- chopped
- 1 12 cups vegetable stock
- 2 tablespoons butter
- salt and pepper
- to taste
Instructions
- Clean clams to remove sand and grit.
- Combine remaining ingredients, except salt and pepper.
- Cover and cook over high heat until clams open.
- Adjust seasoning with salt and pepper.
