Ingredients
- 1 navel orange
- 1 grapefruit
- 1/3 cup slivered red onions
- 1/4 cup each chopped fresh parsley and mint
- 1/4 cup Renees Poppy Seed Dressing, divided", "6 cups loosely packed mixed baby salad greens", "1/2 cup crumbled goat cheese", "1/4 cup coarsely chopped walnuts
Instructions
- Cut orange, then grapefruit into sections, holding the fruit over small bowl to reserve the juices.
- Place fruit sections in medium bowl.
- Add onions, parsley and mint; mix lightly.
- Toss salad greens with cheese and nuts in large bowl.
- Add remaining dressing to reserved fruit juices; mix well.
- Add to salad; mix lightly.
- Spoon salad onto platter; top with fruit mixture.
