Ingredients
- 12 cup fresh cilantro
- 14 cup fresh parsley
- 14 cup olive oil
- 14 cup orange juice
- 1 12 teaspoons red wine vinegar
- 1 12 tablespoons Dijon mustard
- 1 teaspoon salt
- 2 teaspoons sugar
- 18 teaspoon pepper
- 1 12 cups cooked shredded chicken
- 3 stalks celery
- sliced
- 12 head romaine lettuce
- torn into bite sized pieces
- 4 scallions
- sliced
- 1 large red bell pepper
- seeded and cut into thin strips
- 14 cup roasted cashews
Instructions
- Make dressing by combining all ingredients in a blender and puree until smooth.
- refrigerate until ready to use.
- In a large bowl combine the chicken, celery, lettuce, scallions and bell pepper.
- When ready to serve toss with dressing and sprinkle top with cashews.
