Cilantro Chicken With Beans & Rice

Ingredients

  • 1 cup uncooked long grain rice
  • 3 tablespoons Land O Lakes Butter
  • 1 pound boneless skinless chicken breasts
  • cut into chunks
  • 1 tablespoon chopped fresh cilantro or parsley
  • 1 tablespoon finely chopped fresh garlic
  • 1 medium (1/2 cup) onion
  • chopped
  • 1 (15-ounce) can red beans
  • rinsed
  • drained

Instructions

  1. Cook rice according to package directions; keep warm.
  2. Melt 2 tablespoons butter in 12-inch skillet until sizzling; add chicken, cilantro and garlic.
  3. Cook over medium-high heat, stirring occasionally, 9-10 minutes or until chicken is no longer pink.
  4. Remove chicken from skillet; keep warm.
  5. Melt remaining butter in same skillet; add onion.
  6. Cook over medium-high heat, stirring occasionally, 3-4 minutes or until onion is softened.
  7. Stir in beans and cooked rice.
  8. Continue cooking, stirring occasionally, 2-3 minutes or until heated through.
  9. Spoon rice and bean mixture onto serving platter; top with chicken.
  10. Garnish with additional chopped cilantro, if desired.
  11. Serve with hot pepper sauce.
