Ingredients

  • 1 1/2 lb. medium-sized red potatoes
  • 2 tbsp. olive or salad oil
  • 1/2 tsp. salt

Instructions

  1. Cut potatoes into 1 1/2-inch chunks.
  2. In nonstick 12-inch skillet over medium-high heat, in hot olive or salad oil, cook potatoes and salt until potatoes are golden brown, turning them occasionally.
  3. Reduce heat to medium; cover skillet and continue cooking until potatoes are fork-tender.
