Ingredients
- 4 egg whites
- 1 c. granulated sugar
- 1/4 teaspoon cream of tartar
Instructions
- MERINGUE SHELL: Heat oven to 275 degrees.
- Beat 4 egg whites till stiff, gradually add in sugar and cream of tartar.
- Spoon around bottom and sides of greased 10-inch pie plate.
- Bake for 1 hour.
- Remove from oven, allow to cold.
- MOUSSE: Heat 12 ounce.
- semi-sweet chocolate morsels in double boiler, remove from heat.
- Add in egg yolks and whole egg, add in rum.
- In separate bowl, beat egg whites till stiff.
- In separate bowl, beat 2 c. heavy cream till thick.
- Fold egg whites and heavy cream into chocolate mix, spoon into cooled meringue shell.
- Chill a few hrs.
- Whip 1/2 c. heavy cream, spoon on top of chocolate mix.
- Shave chocolate on top of heavy cream for decoration.
