Chocolate Madeleine with 1 Egg

Ingredients

  • 1 Egg
  • 50 grams Unsalted butter
  • 35 grams Granulated sugar
  • 35 grams Cake flour
  • 3 grams Baking powder
  • 10 grams Cocoa powder
  • 35 grams Chocolate

Instructions

  1. Sift the ingredients.
  2. Finely chop the chocolate, melt with butter, and mix.
  3. (I melted them in a microwave.)
  4. Add the egg and granulated sugar into a different bowl, then mix well with a whisk.
  5. Add the sifted ingredients, and mix some more.
  6. Add the melted butter and chocolate, then mix some more.
  7. Cover with plastic wrap, and refrigerate for 2 hours to overnight.
  8. Let the batter rest.
  9. Preheat the oven to 180C.
  10. Thinly grease the baking molds with the butter, dust with the cake flour, then pour in the batter with a spoon.
  11. (Before pouring the batter into the molds, mix it well again.)
  12. Bake in the oven for 12-15 minutes at 180C and they're done.
  13. Remove from the pan, and let it cool.
  14. Using a bamboo skewer helps the madeleine come off nicely from the pan.
