Chocolate Key Lime Pie

Ingredients

  • 300 grams Chocolate Hobnobs (or any kind of choc biscuit)
  • 397 grams Condensed Milk
  • 150 grams Unsalted Butter
  • 3 Egg Yolks
  • 4 Limes
  • 300 ml Double Cream
  • 1 tbsp Icing Sugar

Instructions

  1. Preheat oven to 160c
  2. Finely crush the biscuits, and add the melted butter.
  3. Press firmly into the base and sides of tin and bake for 10 mins.
  4. Once finished, leave to cool.
  5. Whisk the egg yolks and gradually add the condensed Milk.
  6. Add the juice and zest of 4 limes, leaving a little zest for later.
  7. Pour filling onto base and cook in the oven for 15 mins.
  8. Leave to chill in fridge.
  9. Whip the cream and add the icing sugar until firm.
  10. Pipe the cream on to the pie and sprinkle a little leftover zest on top.
