Ingredients
- 1 cup butter
- 1 3/4 cups sugar
- 3 large eggs
- 2 1/2 cups flour
- all-purpose
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon allspice
- 2 tablespoons cocoa powder
- 1/2 cup water
- 1 tablespoon vanilla extract
- 2 1/2 cups carrots shredded
- 3/4 cup nuts chopped
- 3/4 cup chocolate chips
Instructions
- Preheat oven to 350F (180C).
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Sift dry ingredients together; add to creamed mixture alternately with water and vanilla.
- Fold in carrots, nuts and chips.
- Turn into prepared 9x13 inch pan.
- Bake for 45 minutes.
- Cool and frost with Cream Cheese Frosting.
