Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup all-purpose white flour
  • 1 cup sugar
  • 2 12 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 12 teaspoon salt
  • 1 egg
  • lightly beaten
  • 12 teaspoon vanilla extract
  • 1 12 teaspoons fresh lemon juice
  • 12 cup skim milk
  • 12 cup hot water

Instructions

  1. Position rack in center of oven and preheat to 325 degrees.
  2. Brush the inside of an 8-inch square cake pan with oil and sprinkle flour over the pan.
  3. Tap out excess.
  4. Sift together flour, sugar, cocoa, baking soda and salt in a large mixing bowl.
  5. In a small bowl, whisk together egg, oil and vanilla.
  6. Stir lemon juice into milk.
  7. Add to the egg mixture.
  8. Stir in 1/2 cup hot water.
  9. Pour into the cocoa mixture and stir until smooth.
  10. Turn batter into pan.
  11. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
