Ingredients
- 2 pounds Boneless
- Skinless Chicken Breasts
- 3 Tablespoons Olive Oil
- 2 cloves Garlic
- Minced
- 1 whole Chipotle Pepper (from A Can)
- Minced
- 1 whole Lime
- Juiced
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1 Tablespoon Butter
Instructions
- Split chicken breast into smaller strips to make for more even grilling.
- In a medium bowl, mix together 2 tablespoons of olive oil plus next 5 ingredients (garlic through pepper).
- Place the chicken into the bowl with the marinade, turning to coat all of the pieces.
- Cover the bowl and allow to marinate in the refrigerator for up to 2 hours.
- After chicken has marinated, place 1 tablespoon each of olive oil and butter into a grill pan over medium heat.
- Place the chicken in the pan and allow to cook for about 5 minutes on each side, or until cooked through.
- Timing will vary depending on how thick or thin you sliced the chicken.
- Remove chicken from the pan and cover with tin foil and allow to rest for 10 minutes.
- Slice chicken for salads or serve on its own!
