Chili-Rubbed Salmon with Vegetable Medley

Ingredients

  • 1 Tbsp. chili powder
  • 1/2 tsp. dried thyme leaves
  • 1/4 tsp. garlic powder
  • 4 skin-on salmon fillets (1 lb./450 g)
  • 1 tsp. canola oil
  • 1/4 cup Kraft Calorie-Wise Zesty Italian Dressing
  • 2 cups shredded red cabbage
  • 1 can (19 fl oz/540 mL) black beans
  • rinsed
  • 2 Tbsp. chopped fresh cilantro
  • 1 lime

Instructions

  1. Mix seasonings; rub evenly onto 3 flesh sides of each fish fillet.
  2. Heat oil in large nonstick skillet on medium-high heat.
  3. Add fish; cook 4 min.
  4. on each side or until fish flakes easily with fork.
  5. Remove from skillet; cover to keep warm.
  6. Wipe skillet with paper towel.
  7. Heat dressing in skillet.
  8. Add cabbage; cook and stir 1 min.
  9. Stir in beans; cook and stir 2 min.
  10. or until heated through.
  11. Remove from heat; stir in cilantro.
  12. Spoon cabbage mixture onto serving plates; top with fish.
  13. Squeeze 1 lime wedge over each fillet.
  14. Serve with remaining lime wedges.
